LeanCo Vietnamese Pho

Serves 2

ree

4 Cups Beef broth/stock

1/4 teaspoon ginger powder

2 cloves garlic crushed

1 tbsp Fish sauce

1 tbsp Tamari

100g Beef/Chicken/Tempeh per serve

1 pkt Konjac zero carb, low calorie noodles

1 cup mixed veggies (mushrooms, green capsicum, sliced shallots, bean sprouts)

Mixed fresh green herbs chopped (basil,coriander,mint)

1 Tbsp Sesame Oil

Hot sauce optional

1. Bring Stock to boil

2. Sauté garlic, ginger in frypan

3. Add Fish sauce and Tamari

4. Add all to stock and simmer

5. Add Protein to cook or heat through if pre-cooked

6. Prepare noodles according to packet, strain and add to Stock

7. Add veggies and simmer until soft.

8. Serve with mixed green herbs, Sesame oil, and hot sauce
