LeanCo Lamb Burger on Eggplant

Serves 4

500g Lamb mince (or you can use lamb backstrap or fillet cut into 4 pieces sprinkled with garlic and cumin)

1 small onion diced

1 garlic clove crushed

Teaspoon Cumin

Teaspoon Coriander or Allspice

Teaspoon Salt and pepper to taste

1 Eggplant sliced into rounds

1 tomato sliced

1 cheese slice per burger

Handful salad leaves


1. Combine Mince, onion, herbs and spices, form into patties same size as Eggplant rounds.

2. Pan-fry till brown on both sides,then place in moderate oven for 5 mins to cook through while you fry the eggplant rounds.

3. Stack with tomato,cheese and salad leaves,serve with a dollop of sour cream or yogurt.
