LeanCo Mexican Chicken Fajitas

Serves 4

ree

500g Free range chicken tenders

1 Teaspoon salt 1

Tbsp butter

2 Shallots

1 Green capsicum

2 Tbsp Mexican seasoning-sugar free and low carb (see recipe here, https://www.leanco.com.au/blog/lean-co-mexican-seasoning)

300g mixed lettuce leaves

100g cherry tomatoes

2 Avocado

120g Cheese shredded

1 Cup sour cream or yogurt

Handful of coriander or fresh green herbs to garnish


1. Sprinkle the chicken tenders with salt and fry in the butter

2. Add the shallots and sliced capsicum

3. When chicken is cooked and veggies are soft, toss in Mexican seasoning and lower heat.

4. Serve on a bed of lettuce with chopped tomatoes, half an avocado, shredded cheese, and dollop of sour cream or yogurt.

5. Sprinkle with lime juice/tabasco if desired.
