LeanCo Spiced Banana Muffins

Makes 12 Regular or 24 Mini muffins..a Low Carb treat even the kids will love!!

11/2 Cups Almond meal
1/4 Cup Coconut flour
1/4 Cup Unsweetened desiccated coconut
1Teasp Baking Powder
1Teasp Baking soda
1/4 Teasp Salt
11/2 Teasp Cinnamon
1/2 Teasp Nutmeg
1 large Banana mashed
1/2 Cup melted Butter OR Coconut oil
1/2 Cup Natvia baking blend
4 Eggs at room temperature
1Teasp Vanilla extract
1/2 Cup Greek yogurt OR Nut milk
1/2 Cup chopped walnuts OR dark choc chips
Extra Walnuts for decoration.
1.Combine top 8 dry ingredients and mix well.
2.Melt Butter/Oil and dissolve Natvia.
2.Add Banana,Eggs,Vanilla, Yogurt/Milk and beat well-I use a hand blender for this.
3.Fold in Walnuts/choc chips
4.Spoon into muffin tin, decorate as desired.
5.Bake at 180 degrees for 35-40mins for regular muffins and 20mins for minis.
