LeanCo Crack Slaw Casserole

Serves 5

1/2 green cabbage (about 700g)

2 Tbsp butter Tsp salt Black pepper to taste

1 Tsp onion powder

2 Tbsp Tex-Mex seasoning

1 Tbsp Apple cider vinegar

500g minced free-range Pork

200g shredded cheddar Leafy greens to serve


1. Preheat oven to 200C.

2. Shred cabbage with sharp knife or Mandolin Fry cabbage in half the butter until soft but not brown-takes about 10mins

3. Add spices and vinegar, continue to fry and stir for a couple of minutes-set aside

4. Melt rest of butter in pan and sauté pork, when cooked add cabbage and mix well

5. Remove from heat and add salt and pepper to taste

6. Add 2/3 of cheese to cabbage mix and place in baking dish, sprinkle rest of cheese on top and bake until nicely browned.

7. Serve with green salad.
