Serves 4

400ml Coconut cream
Zest and juice of one lemon
1 Tbsp fish sauce
1 Teaspoon stevia sweetener
2 Teaspoon sambal oelek
1 garlic clove crushed 4 x 120g firm white fish fillets
Parsley, coriander or basil leaves for garnish
Chilli sliced (optional)
1. In a large fry-pan combine coconut cream, lemon juice and zest, fish sauce, stevia sambal oelek and garlic.
2. Bring to boil stirring.
3. Reduce heat,add fish and simmer for 10 mins covered.
4. Serve over green veggies,drizzle with sauce and garnish with herbs.
