LeanCo Cauliflower Soup With Crispy Bacon & Cheese

4-5 Serves

750 ml Chicken stock
300g Cauliflower or 1/2 Cauliflower and Broccoli
125g Cream Cheese(Avocado for Detox)
Tbsp Dijon mustard
Salt and pepper to taste
Tbsp Butter
2 cloves garlic
2 shallots sliced
Bacon and Shredded cheese to serve(omit for Detox)
1. Bring Stock to boil
2. Add chopped florets of cruciferous veggies and cook until tender
3. Melt butter in frypan and sauté garlic and shallots
4.Add to cooked veggies with cream cheese/avocado and mustard...let cool a little
5. Add salt,pepper and any other herbs you wish
6. Purée (I use a blender or NutriBullet)
7. Serve with a sprinkle of grilled bacon and tbsp shredded cheese.
