LeanCo Baba Ganoush - Eggplant Dip

Ingredients

2 Medium Eggplants

1/4 cup tahini

1/4 cup lemon juice

2 cloves garlic minced

1/4 tsp of ground cumin 

1/4 tsp of ground turmeric

1/2tsp of sea salt

2 tsp of chopped fresh parsley 

1 tbsp of olive oil (optional)


Method

1. Heat oven to 175 degrees

2.Halve and place eggplants flesh side down on baking paper and roast fro 30 mins (or until soft)

3. Allow to cool

4. Scoop flesh into food processor/blender with remaining ingredients

5. Blend until smooth
