Anzac Biscuits

These Keto Anzac biscuits are a low carb twist on the Aussie biscuit that dates back to World War 1.The original biscuits were sent by wives and women's groups to the soldiers fighting on the front line. Enjoy..and Lest We Forget our Anzacs

2/3 cup Flaked Almonds

1/2 cup Almond Flour

1/2 cup Desiccated Coconut

1 teaspoon Baking Powder

1/4 teaspoon Xanthan Gum

1/3 cup Natvia Baking Blend

30g Salted Butter

1/2 teaspoon Bi-carb Soda

1 large Egg


Preheat your oven to 170C.

1.Line a cookie tray with baking paper.

2.Place flaked almonds on the tray and toast for 8-12 mins until crunchy and golden.Cool.

3.In a mixing bowl add almonds, almond flour, coconut, baking powder and xanthum gum, mix well.

4.Place butter and Natvia sweetener in a small saucepan and place over medium heat.

Once the butter and Natvia has melted and is starting to bubble, add the bi-carb soda and mix well.The mixture will turn thick and foamy.

5.Pour into the dry ingredients and mix well.

6.Add the egg and mix well.Spoon onto baking tray (I use 2 tablespoons per biscuit)

press into shape.

7.Bake for about 15 mins until golden brown and firm around the edges.Leave them a little longer if you like them crisp. Cool and store in an airtight container.
